Welcome to our little homestead in Maine
This is one of my favorite recipes! I love how quick it comes together and that it only uses one bowl to mix.
Baking is something that I have enjoyed doing but not something I’ve felt confident with. But, I’m here to say that baking is just a skill you learn and with practice it becomes something that you will do with ease. This is why when someone is starting on their baking journey I recommend starting with a quick bread or cake that requires a few steps.
I know that when I bake and I have to use so many bowls, measuring cups, etc that I get overwhelmed with all the dishes (I’m not a fan of washing dishes).
Growing up my mother didn’t show me how to cook, bake or really how to do anything in the kitchen. I don’t have a cookbook that has been passed down from generation to generation.
So basically I was flying by the seat of my pants.
Over the years, as our family has grown, I have felt a need to truly know where our food comes from and what is in it.
When I decided to bake bread and ultimately stop buying loaves of bread from the grocery store it was a big step. I had made bread in the past but I just remember feeling like it was such a hassle with rises and making the yeast set up correctly. So I started with a simple sandwich bread and made it multiple times a week. I got to a point where I knew exactly how the dough would turn out whatever happend to it (too much/little flour, humidity, poor yeast) I would be able to troubleshoot so the bread would come out tasting delicous.
But really…is there really a bad loaf of bread? I don’t think so. I’ve never met a “bad” loaf of bread that some soft butter couldn’t fix.
So I won’t make you wait any longer! Here is my simple One Hour Quick Bread recipe:
Makes one loaf of bread in about an hour
Ingredients:
1 1/2 Cups warm water
1 T honey
1T active Dry Yeast ( about 1.5 packets)
1 1/2 tsp. salt
3 1/2 -4 1/2 Cups flour
Cooking Sheet or loaf pan. I prefer an 8×4 (grease pans)
